This easy, no-cook appetizer is creamy, colorful, and loaded with sweet corn, Rotel tomatoes, cheddar cheese, green onions, and fresh cilantro. The best part? Instead of mayonnaise and sour cream, this version uses protein-rich Greek yogurt for a lighter dip that doesn’t sacrifice flavor.
Whether you’re hosting a backyard barbecue, heading to a potluck, or just need an easy snack for a hot afternoon, this healthy summer corn dip comes together in about 10 minutes and always disappears fast.

Why You’ll Love This Healthy Summer Corn Dip
There are plenty of corn dip recipes out there, but this lighter version has become one of my favorites. Plain Greek yogurt creates the same rich, creamy texture as traditional recipes while adding extra protein and reducing the fat.
Here’s why you’ll want to make it all summer long:
Ready in just 10 minutes
High in protein thanks to Greek yogurt
Just a smidge of mayonnaise & sour cream
Perfect for make-ahead entertaining
Naturally gluten free when served with gluten-free dippers
Great for cookouts, picnics, pool parties, and game day
After chilling for an hour, the flavors blend together beautifully, making every bite creamy, fresh, and just a little bit addictive.
Greek Yogurt Is the Secret Ingredient
The biggest difference between this healthy summer corn dip and the classic version is the Greek yogurt.
Use plain full-fat Greek yogurt for the creamiest texture and best flavor. It has just enough tang to balance the sweetness of the corn and the sharp cheddar cheese while adding protein to every serving.
Unlike regular yogurt, Greek yogurt is thick enough to hold everything together without making the dip watery, so it’s perfect for scooping with tortilla chips or fresh vegetables.
The Perfect Make-Ahead Summer Appetizer
One of the best things about this healthy summer corn dip is that it’s actually better after it chills. Making it an hour or even a day ahead gives the corn, tomatoes, cheese, cilantro, and green onions time to soak up all the creamy goodness.
That makes it an ideal recipe for summer entertaining. Simply mix everything together, refrigerate, and pull it out when guests arrive.
It’s always one of the first appetizers to disappear at barbecues, family reunions, neighborhood cookouts, and holiday celebrations.
Easy Ways to Customize Your Corn Dip
This recipe is delicious exactly as written, but it’s also easy to customize.
For extra heat, stir in diced jalapeños or use Hot Rotel. Add a can of drained black beans for even more protein and fiber, or mix in diced avocado just before serving for extra creaminess. A squeeze of fresh lime juice brightens the flavors, while pepper jack cheese adds a spicy twist.
If fresh summer corn is in season, feel free to substitute it for canned corn. Grilled corn adds a delicious smoky flavor that’s hard to beat.
What to Serve with Healthy Summer Corn Dip
Serve this healthy summer corn dip with tortilla chips, pita chips, crackers, pretzel crisps, or plenty of fresh vegetables like bell peppers, cucumbers, celery, and carrots.
It also makes a delicious topping for tacos, grilled chicken, baked potatoes, or even burgers.
Once you try this lighter version, you may never go back to the original. It’s everything you love about classic corn dip, only fresher, higher in protein, and perfect for every summer gathering.
